Sodium benzoate also referred to as benzoic acid sodium is widely utilized as a food preservative across the food industry. It is either odorless or has a faint benzoin aroma with a sweet and astringent taste. It remains stable under normal atmospheric conditions while absorbing moisture when exposed to open air. Naturally occurring in blueberries apples plums cranberries prunes cinnamon and cloves it exhibits slightly lower preservative efficacy compared to benzoic acid. Approximately 1.180 grams of sodium benzoate provides equivalent antimicrobial activity to 1 gram of benzoic acid.
