Melamine, commonly known as “melamine”, “protein essence”, “mi’an”, is a triazine nitrogen-containing heterocyclic organic compound often applied as a chemical raw material. It appears as white monoclinic crystals, nearly odorless, slightly soluble in water (3.1 g/L at room temperature), and soluble in formaldehyde, acetic acid, hot ethylene glycol, glycerol, pyridine, etc. It is insoluble in acetone and ethers. It is harmful to the human body and must not be used in food processing or as a food additive. However, some unethical businesses have illegally added melamine to dairy products to falsely elevate nitrogen readings during protein content testing.
