Dimethyl dicarbonate (DMDC), also known as Viguolin, is a juice beverage preservative (INS No. 242) permitted under China’s food additive standards. At normal or low temperatures, DMDC strongly kills many spoilage bacteria in juice drinks. Its preservative action comes from modifying and inactivating key bacterial enzymes. Compared with physical sterilization, DMDC is low-cost, easy and safe to use, and does not alter product taste, aroma, or color. Product Application

Dimethyl Dicarbonate (DMDC) is a microbial control agent used in wine, ready-to-drink teas, nonjuice-containing beverages, carbonated dilute beverages with juice or fruit flavor (juice content ≤50%).
DMDC is widely used as a broad‑spectrum antimicrobial agent. Its main targets are yeasts including Saccharomyces, Zygosaccharomyces, Rhodotorula, Candida, Pichia, Torulopsis, Torula, Endomyces, Kloeckera, and Hansenula. It is also bactericidal against Acetobacter pasteurianus, Escherichia coli, Pseudomonas aeruginosa, Staphylococcus aureus, multiple Lactobacillus species, Pediococcus cerevisiae, and Escherichia coli O157:H7.
DMDC acts by inactivating microbial enzymes, mainly via reactions with protein imidazole and amine groups, destroying the microorganisms. Unreacted DMDC quickly breaks down into methanol and carbon dioxide. Its activity depends on hydrolysis rate, which varies with beverage temperature. DMDC fully hydrolyzes in about four hours at 10°C (50°F) or two hours at 20°C (68°F).
