Description

Adipic acid is a crystalline powder that is nearly odorless. It shows the mildest acidity among common food-grade acids and provides strong buffering performance within pH 2.5 to 3.0. Similar to succinic acid and fumaric acid, it barely absorbs moisture from air. When added to food products, it brings a mild and refreshing tart taste. Product Application

Adipic acid serves as an acidulant and flavor regulator. It is stable, non-hygroscopic and slightly soluble in water, with a solubility of about 1.9 g/100 mL at 20°C. At a 0.6% concentration, it reaches pH 2.86 at 25°C. It is used in powdered drinks, beverages, gelatin desserts, lozenges and canned vegetables. It also acts as a leavening acid in baking powder. It can be used as a buffer to maintain pH between 2.5 and 3.0. In some cases, it is added to edible oils to prevent oxidation and rancidity.
