Description

Potassium sorbate appears as a white crystalline powder, which is the potassium salt derived from sorbic acid. It was first discovered in mountain ash trees during the 1850s, while modern industrial production mainly adopts synthetic processes. As a highly efficient food preservative, it is completely biodegradable and has a molecular structure similar to natural fatty acids found in many daily foods. It inhibits the growth and reproduction of mold and yeast effectively, and is extensively used in margarine, wine, cheese, yogurt, soft drinks, baked foods and other products. When dissolved in water, potassium sorbate ionizes to release sorbic acid, the active component that suppresses yeast, mold and certain bacteria. It is commonly used at concentrations ranging from 250 ppm to 1000 ppm in cheese, dips, yogurt, sour cream, bread, cakes, pastries and fillings, baking mixes, doughs, icings, fudges, toppings, beverages, margarine, salads, pickled vegetables, olives, fruit products, sauces, smoked and salted fish, confectionery and mayonnaise. Due to its excellent preservative performance, it has become one of the most widely used preservatives in the food industry.
