Description

Methyl cinnamate presents as white to pale yellow crystals with a characteristic cherry and balsamic fragrance. It has a melting point around 34 °C, boiling point at 260 °C, refractive index nD20 of 1.5670, and relative density d435 of 1.0700. It dissolves in alcohol, ether, glycerin, propylene glycol, most non-volatile oils and mineral oils, while being insoluble in water.

Product Application

Methyl cinnamate is the methyl ester of cinnamic acid. It appears as a white or transparent solid with a powerful aromatic scent. It exists naturally in many plants, fruits such as strawberries, and culinary spices including Sichuan pepper and certain types of basil. Eucalyptus olida contains the highest known level of methyl cinnamate, reaching 98%, with a fresh weight yield of 2–6% in leaves and twigs.
It is widely used in flavor and fragrance manufacturing. Its taste is fruity similar to strawberry, and its aroma is sweet, balsamic, and fruity, evoking notes of cinnamon and strawberry.
It is known to attract male orchid bees such as Aglae caerulea.
Methyl cinnamate crystals can be extracted from Eucalyptus olida via steam distillation.
