Inositol (hexahydroxycyclohexane) is a natural compound widely found in both plant and animal tissues. In animals, it is highly concentrated in organs such as the brain, heart, stomach, kidneys, spleen, and liver, existing either in free form or as part of phospholipids. In plants, cereals are major sources, especially as phytic acids (polyphosphoric acid esters). Among several isomers, myo‑inositol (cis‑1,2,3,5‑trans‑4,6‑cyclohexanehexol) is the form used in food additives. Pure inositol is a stable, white, sweet crystalline material. The Food Chemicals Codex requires a minimum assay of 97.0%, melting point 224–227 °C, and strict limits for arsenic, lead, heavy metals, sulfate, and chloride.

Inositol is an essential vitamin for normal lipid metabolism in the human body. It enhances the absorption of lipid-lowering medications and vitamins, promotes cell growth, and supports fat metabolism in the liver and other tissues. It is used as an adjuvant treatment for fatty liver and high cholesterol. It is widely used in food and feed additives, commonly added to fish, shrimp, and livestock feed at 350–500 mg/kg.
